I was given the idea by a fellow ringer.

My jalapenoes are doing decent so I have a few to experiment with. I am smoking them right now they have been smoking for almost 2 hours now at 225 to 250.

I took the the peppers off of the smoker just shy of the three hour mark. Since it was the first time I have ever smoked peppers for this purpose I was afraid that I would get too much smoke on them. I smoked them with a mix of white oak and wild cherry. When i was taking them off of the smoker they smelled amazing, they had a sweet almost raisin like smell to them.

I got them all on the dehydrator, they filled up three trays.

Are you going to grind them up? I smoke sliced peppers (Japs, Habs, Serranos, Cayennes), dehydrate, and grind them to make 'Devil's Dust' - I stole (Um...'Borrowed' Laughing ) Canadian Bacon's name/idea for it - Really good stuff!

I bet those smoked Jalapenos will dry up and grind into some beautiful powder.

The peppers are finally dried. It was definitely a learning experience. I should have cut them in half lengthwise so they would dry quicker. Other than that I think they came out great.

BUGS: Sorry, I am going to grind them. I thought I put that in the original post but I guess not. Embarassed

CB: If the smell is any indication it should be amazing.

I need to get a spice grinder. Is there one you would recommend. It will be used for peppers only.

I have a mortar and pestle but i'm lazy Laughing

I have two of them, one for peppers and one for other spices. The Mr. Coffee grinder does a great job for under $20. Had it for close to 20 years and it's just as good as ever. Two tips: 1) when you grind, do not inhale the dust when you open the grinding chamber; 2) to clean it out afterwards, run1/2 C of plain white rice through it and wipe it out with a damp towel after you've emptied it.

Sounds like you are on your way to some excellent chipotle.

+1 on the Mr Coffee grinders. I've had one for 15+ years (just for spices) and it still works great. I had another brand (can remember brand) just for coffee and it quit working after 2-3 years. They're great to have for grinding misc stuff. For example - I use a lot of Black Pepper. The little 2oz jars are $3-4, but whole peppercorns are $4-5 a pound, plus whole spices are generally much cheaper.

A rub I like for chicken wings is ground, smoked, dried Japs (the peppers Laughing ) with salt, sugar, granulated garlic, and black pepper.

One other IMPORTANT thing - Grind peppers outside! Especially if you're married Laughing

Well I got all the peppers ground. I went with the Mr. Coffee grinder and it did great. I weighed the powder on my kitchen scale and I had 6oz.

My sinuses are definitely clear at the moment. Smile

BUGS: Thanks for the input, I like to buy whole spices when I can. You know what you are getting when you buy them whole, no filler.

Your wing recipe sounds really good, I think I will give it a try soon, very soon Laughing

I ground the peppers in the house. Shocked After I was done and had my mess cleaned up my girlfriend walked in and was here for a few min, she said "Huh, that's weird. My nose is burning." Shocked I said "Yeah that is weird " Laughing

Im a little late...but your powder looks great.I used to use a coffee grinder but
I bought a Magic Bullet on sale and I think it does an amazing job making powders.....it is totally dedicated to my peppers. Very Happy

Thanks for the input CB, I never considered using something like that. I will keep an eye out for a sale on them Smile. I could keep one as a spare. Smile

If nothing horrible happens I will have an abundance of peppers. My super hots are starting to turn and I have picked my japs 3 times and i usually get more than the last

I will definitely be grinding the other peppers outside. The japs aren't as bad, but they smelled so good and I kept smelling of them. My nose wasn't burning but it was definitely tingling just about all day. Smile

I went to my dad's this morning and picked my japs there and I almost had a 5 gallon bucket full. They are on the smoker right now.

Good luck with smoking your peppers Beertooth!

It was suggested to me by a fellow ringer (Canadian Bacon), so I thought I would give it a try.

I used my stick burner to smoke them so I used some oak and wild cherry mixed. I have some hickory too but I was afraid I would get them too smoky. They turned out great .

One problem I had with the first batch was I just cut off the stem end and smoked and dried them whole. It took 2 days in the dehydrator to dry them enough to grind into powder so I would suggest cutting them lengthwise in half.

The second batch I smoked them the same way but before I dried them i cut them in half. They dried much quicker
