Well I started the canning season off last week with a little road trip to Dayton mountain (25 miles or so) where there are a couple large farms that sale produce on a large scale. They are also glad to sell to the public. I bought 4 boxes of roma tomatoes.
I always stop and get lunch at a little food trailer that is just off of the highway. They have great Mexican food and since it is close to all the farms everything is fresh. I got some pork tacos

Two boxes were ready to be canned so I used them to make some pasta sauce.
The first box I ended up with five 1/2 gallon jars.
The next day I canned 28 quarts of blue lake green beans
The second box plus what came out of my garden, I ended up with seven 1/2 gallon jars. My dad had cucumbers ready so I also made 7 quarts of bread and butter pickles.
I got some more cucumbers and canned some kosher dill pickles. 2 pints, 15 quarts, 3 half gallon jars, and a large pickle jar.
I canned 7 more quarts of green beans a couple days ago.
I am just getting started I still have a lot of canning to do and I will update when I get more canned.

| I started canning a couple years ago for the first time. I was wanting to try canning venison and it turned out great. Last year for the 1st time I did about 15 quarts of green beans for my parents. It was the end of the season and my dad was going to leave the beans on the garden to rot. I picked them and canned them for him. |

NICE! That's a lot of good-looking GOOD right there! Who are ya feeding, an army battalion? All I've done so far is 20 pints of Strawberry jam. My garden isn't doing so great this year for some reason. Had a lot of stuff just up and die . I re-planted the cukes and they're growing like crazy, so I'm going to make a big batch of kosher pickles if I can stop eating them fresh sliced . And I'm gonna do pickled Okra too. I make them like the kosher pickles, but add red pepper flakes for a little kick. _________________ The Matt Ryan of LIARS! (#2)

flyin-lowe: Thanks for looking. I have never tried canning meat. I might have to give it a try this year.
BUGS: No not feeding a battalion, I just like to eat . My dad, as usual, planted a lot of stuff this year
We have both been canning. He has canned around 300 quarts of stuff, green beans, pickles, salsa and blackberries so far I think.
I have canned close to 100 quarts if I was guessing.
Sorry to here about your garden, I had a couple red bell pepper plants die. The weather here just hasn't been the best. You aren't that far south of here so i'd say the weather is similar.
I think my peppers died because of all the rain we had. The ground was so saturated that when it did rain it just puddled up, my garden was under water a couple times.
I like pickled okra like that too, but I haven't made any in a couple years
k.a.m. : Thanks there is nothing better than canning your own food. Much better than what you buy from the store and you can make it exactly the way you like it.
I did some more canning the other day and canned some more green beans and some salsa.
I canned 42 quarts of these string beans:
I also canned some salsa, 14 pints and 1 half gallon jar(for when you really want salsa)
