Was enjoying a margarita in the yard last week with my Bride when a dang wasp flew into my glass. He died a violent death shortly thereafter.
So my day started a few days before Saturday at my go-to pig place in beautiful downtown Catlett, Virginia.
This place has any and everything you could want animal wise.
Had to get some last min groceries.
Pulled "Big Larry" into the front yard to level him up.
Wood for the firepit later in the evening.
My Bride (aka, Assistant Pitmaster) at 4:30 am Saturday morning.
The double threat! Had a couple butts with drip beans on the WSM.
Life is good at 5 something in the morning...coffee from my trusty mug and an LFD DL-700 cigar.
Two hours in time to cover the ears and snout with foil (to keep them from burning off).
Very early in the morning my Assistant to the Assistant Pitmaster joined me.
Representing! HAIL TO THE REDSKINS!! Also check out Toot's cool Fourth of July shirt she made (with Mom's help).
Prepping the drip beans.
A sign we made.
Toot's idea to put the flags on the smoker.
And the mailbox.
My Father's Day gift (the pop-up) came in handy.
Flags on the fence.
Toot made a sign welcoming folks to the "World's Greatest Pig Pickin".
Moved the pop-up over to the "cigar lounge".
Pig resting (pulled the foil off) and before adding the green stuff to make it all prettied up. I wish I had taken more pics but was very busy. It was an 86 pounder.
A funny story...this was the overflow beans that didn't fit in the big pan. I put it on the big smoker.....and forgot about them. This is many many hours later!
The day after...power washing everything.
We had 102 folks show up. We had a blast and the weather was outstanding...low 80s.
Hope you had a wonderful Fourth! And to my friends outside the US hope you had a wonderful weekend! All the best.

Thanks Brother. There were 59 teams competing, Debbie and I got a 12th place final table chicken, no call on our ribs and an 8th place brisket. Not a bad day considering the caliber of teams we were cooking against. _________________ Always remember slow and steady wins the race.
