Hi
I've spent a while discovering the joys of low slow barbecue, as opposed to what we do here, which is grilling of large amounts of different meat over charcoal or wood (we tend to look down on gas grills) wherever and whenever we get the chance.
Whether it's called a braai (grill in Afrikaans) or shisa nyama (literally hot meat) in the Nguni languages, it's certainly the national cuisine and can vary in sophistication from something rough and ready in the bush to something really quite genteel.
Coming from this background, I've spent the past while experimenting with various ways of hot smoking and am looking at learning a lot more.
