New kid came in September.
Brisket was just picked up on Friday. Won a chili cookoff with that hunk of meat. $2.99 for prime at Costco. It was perfection!
It was only like 25° so figured my best bet was using the big gas grill to cook the meat and sauce at same time in different pans then combine.
Brisket was seared then moved to pan. Added homemade chili powder and beefstock. Simmered on grill for 2-1/2 hours. Had no clue if it was enough to get tender but had to open it eventually. Turns out it was seriously perfect and just needed another 30 min to finish in the sauce.
The sauce is kinda a pork tomato sugo which I just added chili powder to. Seared pork chops, then sauteed sofrito, then crushed tomatos and simmered 1-1/2.
No finished pics but it was all gone before the tasting was over. Had lots of people coming for seconds. Also lots of requests for own bowl when couple came up to share.

I knew there was no way to get it all done in one pot. I either would have scorched it or not had it reduced enough. This worked perfect and I'll be doing it again for next years chili.
My secret is my chili seasoning. I make my own mix from scratch and it really makes a difference. Everybody was shocked when I told them my ingredients. All the other teams had tons of stuff in there, I had meat, stock, tomato, sofrito, chili seasoning, sugar, and touch of dark chocolate.
This was my first ever cooking competition so pretty happy I'm now 1 for 1. _________________ In the shadows of Lambeau |
