Hello everyone! My business partner and I are working on getting our barbecue trailer up and running and I need some help with the enclosure for our smoker that the health department requires.
We have a Lang 108" that is on it's own trailer, and the HD says that it needs to be screened in to prevent bugs from getting near it. I have been searching for something like a pop up enclosure or tent, but the largest ones I can find that offer screens are 10x20 and we need 10x25 or 10x30.
Has anyone dealt with this in the past that could provide some help? I see a lot of the best places in Texas have built wood enclosures, but it seems like their smokers are placed on a trailer rather than built into one like our Lang.

As Fish&Q mentioned, you need to read the food code for your state,
An inspector may "Say" you need something even though it is not required by the current laws.
Mr Tony and I have had some experience with inspectors saying something but providing no law to cite their statement.
In the USA, if there is no law against it, that means it is legal.
Meaning you have got to know the laws better than a government bureaucrat! _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

That is bizarre. But the law sometimes is.
Would the bugs enter through the firebox and somehow end up on the food?
Follow Harry's advice and read the code! |
