Well it is that time of the year where I make smoked turkey, sausage, and okra gumbo for my office.
Here is the bird after resting.

Tomorrow I will make the gumbo, with 6lbs of sausage, 3lbs of okra, and 36 eggs. Very Happy

Kevin, looks like a good start. I still can't handle the eggs but I know it will be awesome. My plan for this weekend is to make a batch of Andouille sausage for gumbo next weekend. Tom

Sunday Gumbo.
I apologize the pics are not very good Debbie's camera is dying on us I believe.
First I sliced up 6lb. of sausage.


When the water started to boil I added the turkey and sausage to make the stock.


The stock coming together.


Then I made my roux.


When the roux reached my color I added the trinity and finished it off.


The gumbo just before adding the okra.


Here is the okra after being smothered down.


My first bowl at the office with a dash of file on top.

This Cajun does not do okra but I do make a killer gumbo. That looked really nice Kevin especially for a man living in East Texas lol. I live in the heart of Cajun Country.

Truth be told, I serve file at the table, okra or not. Got a pot on for tonight's dinner. For some unknown reason, my Cajun wife wants to have potato salad as a side with gumbo. In your experience is this just a crazy family tradition or a legitimate combination common across Cajunland?

I not sure if I would call it a tradition but here in Lafayette when you cook a gumbo potato salad is always the side and actually like my potato salad in the gumbo when I eat.

It's a requirement for this Coon Ass! Nothing like cold potato salad with gumbo....I can't recall if we've ever had a gumbo without potato salad.

Gumbo also HAS to have eggs...... Very Happy

As far as okra, it's either/or with me. I don't particularly like oysters in gumbo, but everything else goes.

Living here in Mobile, when people find out that I'm Cajun they want me to try their gumbo, but it just isn't the same.......they put tomatoes in theirs (YES, I said TOMATOES!!!), it has everything under the sun in it, and it's so hot you can't eat it.......they just don't understand.
