Hello all, I'm a 27yo test engineer from Shippensburg, PA. I got started with BBQ/grilling from a very young age when I would hang out with my dad anytime he fired up the old Weber. Currently I've got a 22.5" Weber gold kettle and a rusted out 4-burner Char-Broil gas grill. After lurking on here for a couple months I'm considering building a UDS and maybe another charcoal grill from a 100 lb propane tank since I love fab work anyway.

I've done a couple racks of ribs and some pork loins on the gasser with hickory chips but even when I cook steaks (reverse sear) or chicken I almost always cook them on indirect heat at 225-325deg. So my question is, am I just grilling or is it BBQ since I'm not cooking over direct heat?

Welcome to the ring mopar440_6, looking forward to seeing some pics of your cooks. Very Happy
The temp range you are cooking at is slightly smoking and BBQ not grilling. Whether you are cooking over the coals or not really doesn't matter in my opinion. A lot of folks use their UDS's without diffusers or water pans and cook BBQ directly over the coals.

Typical temperature ranges for outdoor cooking are.
Smoking. 150°/250°
BBQ. 250°/350°
Grilling. 350°/450°

@Maniac - Doesn't matter as long as its good, got it. Very Happy And I'm not sure I'd consider the 80/81 split "just north" of here. Wink

@Canadian Bacon - I've got a 1968 Dodge Charger and a 1941 Plymouth convertible. The '68 is a basket case and it isn't a 440+6 car but its the first car I ever bought and its been my dream as long as I can remember.
