I have made a couple of batches of peanut brittle and pecan brittle here as of late. They turned out excellent. Today as I was trying the pecan brittle and I got to thinking that a rich smoky flavor added to the pecan should be wonderful.

With brittle making, you add uncooked nuts to the boiling candy and by the time it is at 300 deg the nuts are done along with the candy. At this temp and time the pecans are on the edge of being overcooked. Most are perfect with just a few being to scorch. Pecans burn very easy in my experience. Next time I will wait a few minutes after the boil has started to add them to cut down on the amount they cook. Peanuts are perfectly done at this point.

I was thinking of trying to cold some some pecan halves then use them to make the brittle. The smoking would be for flavor only and the cooking would take place in the candy making. What do y'all think? Worth a try??

I can remember eating pecan pies that were cooked in a wood burning stove that were exquisitely flavored with oak. I would think this would be similar.

Well, I threw a pound of pecan halves into the smoker a few minutes ago for a cold smoke. We shall see...

Back to the drawing board... My kids said the brittle tasted like bacon. Oh well, might try again sometime.
