I have a side firebox smoker that I have used for 10 years. I can cook ribs @ 250-275 degrees in about 4 hours, give or take 30 minutes. I recently began using a trailer smoker which has the firebox directly under the cooking chamber.
First time I cooked ribs, I over-cooked them. Kept the temp @ 250-275 just like my side firebox smoker. My question, Does a vertical smoker cook faster because of the position of the meat over the firebox? Any advice is greatly appreciated. |

Check your temps at the grates. You may find that the temps where the slabs are resting in your cookers could differ greatly from what your gauges are reading. _________________ BBQ is like sex...
Even when its bad its still pretty good!
...besides, when is the last time you turned down BBQ?
