So early this spring I signed up for Smokin' on the Pecos in Artesia NM.
For me is a big deal. Its over 1200 miles from my home in MN (Minnesota) to NM (New Mexico)
And I have a very small rig.

Well now they tell us we need a temp food permit even though I'm not vending. Ok I've done food permits, but man!
NM is really anal about this. You need the full setup, hand washing station, 3 bottom sink, approved surfaces, sanitizer, etc etc.
You even need to list where you bought the product and test strips for the sanitizer!

I got a small rig and this ain't going to be easy.
I hate to spend all the $$$, drive 1,200 miles and have some state inspector send me packing.

Man, if they had disclosed this before taking my registration fee I wouldn't signed up.
So now what do I do?

biker.chef, I read the rules and if your competing there was no mention of any food permits they only applied to vendors. Are you sure they weren't confused about you wanting to just compete or are you going to sell food. It read like you just want to compete.

Here is what the organizer said in the email:

Maybe in the future, we will not need to go through this process but for now we have to.
Why? Technically speaking, even though you are not selling product, you are proving product to the judges
and the judges are considered to be members of the public, Therefore, .........

I was kind of hoping someone would say its just a formality.

I used to exhibit in ABQ in the salsa bidness at a hot foods show. The regulations (and the fact that the regulator's jobs were tribal largesse) made it untenable to repeat an exhibition there.

Almost 5 years later I still have to field telephone calls from the NM state gov't asking about unpaid taxes I never incurred because I never went back.

You can take your 'desert beauty' and shove it where the sun doesn't shine.

It is not that big of a deal, the promotor Dave sent an email with how to fill out the permit. Last year they did not come around and inspect. You do need to have the three tubs for washing just in case. If you do not have the bleach test strips I have some extras you can have. This is a good competition and Dave and his wife try to take care of the competitors. Rio Rancho the next weekend is a lot tougher, the health inspector does inspect every competitors site there. Only complaint last year was the ambient temperature, it was Hot.

In my opinion we are paying through entry fees for the judges to taste our food they are not paying us to taste it. I believe I will stay in Texas where all I have to do is make sure we are as sanitary as possible given the circumstances. There is not a competition out there worth me entering that forces me to meet the states guidelines for vending when I am not vending that is ridiculous.
