I have about 100 dove in my freezer that I want to cook up. I usually cut the breast off the bone, wrap with onion and jaeleno in bacon and grill. Thinking about smoking these instead of grilling. Any thoughts? Are they too small and do they just dry out?

Honestly, I think they'll be better grilled than smoked. If you do give smoking them, brine them (1/2 C salt, 1/2 C sugar per gallon of water) for a few hours and wrap them in bacon like you suggested. They will dry out if measures aren't taken. Used to love it when my friends went dove hunting, 'cause my part of the hunt was to cook up the harvest.
