I will cook my first whole hog starting early Sat. morning. The hog weighs 70lbs, I am going to cook it raceing style. I just want to make sure I am doing it right. I plan on cooking around 250 to275 deg for about 12hrs to 195 degr. I will cover the ears and snout with foil and wipe it down with olive oil. does this sound like I am on the right track. any tips will help

Look in the catering stickies for BBQMAN's 101 post, it will walk you thru the process from squeal to meal...
