I really like grilled rabbit....picked up a fresh farm raised rabbit
and marinated it in a store bought marinade....Memories of Morocco for 24 hours.











Fired up the egg with the plate setter in and cooked the rabbit at 350-375 degrees for about 45 minutes
turning a few times.I threw a few apple chips in for a bit of smoke.









Turned out great ,nice flavor from the marinade.
Served with salad and some mushroom risotto and a spoonful of my hot peppers in oil....and I mean hot. Laughing Laughing

Looks fantastic, CB. I'm partial to rabbit myself. Got one in the freezer for Hassenpfeffer next week (had to get past Easter or the girls would have freaked out). Only place I can find it is Whole Foods and H-Mart (and I can't afford WF).

Big O ,because of the heavy Italian population around here...fresh
rabbit is carried by most of our local supermarkets ...
but you are right....rabbit is expensive around here....that guy was $22.

Looks awesome CB!!
I usually sear mine on the grill, and then stew it in the Dutch oven. How was the texture on your? Was the sauce similar to Moroccan Harissa?
The Plating looks very nice Very Happy

BigOrson, Try Dekalb farmers market, the Rabbit is always fresh and reasonably priced.

Man, I only get to DeKalb County about twice a year. I'm in far NE Cobb and I spend more time in Roswell than I am comfortable with. Going into DeKalb is about like going on safari for me (I'm a true homeboy). The Farmer's Market in Smyrna is nearly a hundred mile round trip from where I am.

"President's Choice" rings a weird bell with me. What chain carries that brand? I have a feeling the wife would love that stuff.

Rick, great choice on the plate up to go with the risotto. I still have never tried rabbit in my life, but something about it just looks good.

CB that is one fine looking Wabbit. I wish it was more readily available around here. I've just put a trip to the City Market and some Northeast KC area markets on the calender to find me a rabbit connection.

Excellent looking cook. I still have your last rabbit cook dancing around in my head.....the presentation is always picturesque. Thanks for sharing.

Was it tender to eat?

Whenever I grilled wild rabbit, it was tough. Did the marinade make it tender or is it because it was farm raised?

That rabbit looks great!

I used to eat rabbit all the time, my ex father in law raised them for fur, so he always had between 100 and 200 rabbits in a barn at my house. The freezer was always full.

Have noit had rabbit in years. I got several that run around the property so maybe I should set a trap or two..

Thanks for all the kind words my fellow ringers.....I love rabbit at least 3 times a year....
I have two brother in laws...one Italian...one Portuguese...the Italian will do roasted rabbit...lots of oil and rosemary,my fav....
and the Portuguese like to do it in a wine sauce and rice...and its awesome.
Myself I like it grilled....I usually bring the chunks to an IT of 160 degrees....going any longer will dry it out.
Yes farm raised are much tender than wild....I am not keen on Jack Rabbit,they are muscle...but do very well in a stew.
I always like to marinade overnite...I find it does impart some awesome flavor....I try a different marinade every time...but it's still hard to beat evoo,rosemary and garlic. Very Happy Very Happy

I have well over 100 different rabbit recipes in a folder.....
