So I made my first paella on a Friday night for supper...


And flew out early the next morning for a business trip.


The hotel had added rockers since my last trip...nice touch.


Of course during my stay I had to hit the shrimp trucks on the North Shore.


Garlic shrimp on the left and lemon butter shrimp on the right.


Had to visit one of my out of the way beautiful places.




Beautiful scenery to include a part of my finger!




One of the first stops is a Costco run to get room snacks, water bottles and Mai Tai mix (alcohol included). Much cheaper than ordering drinks at the hotel or out in town. So, I would sit on the balcony watching Waikiki enjoying a Mai Tai and a cigar!

I'm loving the tropic breeze, island sunshine and sandy beaches...all the while back home......


My Honey sent me a pic of some socks and scarf she just finished knitting. She is a whiz at knitting!


I flew home and had a hankering for a Low Country Boil.


I did it on the stove top since it was just the six of us.

Trying new stuff for supper. I blended two recipes together. Breaded pounded chicken!


Chicken schnitzel!


Smells good cooking!


Sauteed some shrooms in butter and garlic.


Making the gravy.


Smashed taters.


Schnitzel done and resting.


Tried a new roll recipe too.




Man oh man was it all good. The flavors of the garlic shrooms blending with the herb breading of the schnitzel and gravy on top of that with made from scratch buttered rolls...I hurt myself I think I even got it behind my ears!


Where's my recliner!


Tomorrow is St Paddy's day had to throw some green in the mix! My Bride is on a martini kick. She is having a Lemon Drop Martini while I am having a Sour Apple Martini.

Dan's Chicken Schnitzel

Prep Time: 15 min Cook Time: 20 min

Serves: 4 serving

Ingredients

2 bone-in chicken breasts
3/4 cup flour
2 large eggs beaten
1 cup plain breadcrumbs (I used Panko)
Kosher salt, to taste (I used reg salt)
Freshly ground black pepper, to taste
1/4 cup canola oil
2 tablespoons unsalted butter (I used salted butter)
1 (8-ounce) package sliced mushrooms
1 teaspoon chopped garlic (I used more garlic)

Directions

Slice each thick boneless breast in half lengthwise. Put them between pieces of plastic wrap and pound them with a mallet or a small skillet until they are 1/4-inch thick.

Set up a breading station with three pie plates or shallow dishes. Put the flour in one and season it with a generous pinch of salt and pepper.

Take the eggs beaten with 2 tablespoons of water in another, and the breadcrumbs in the third. I stirred in about 2 tbsps. of chopped herbs (I used parsley and thyme but you can use other herbs that you think will go well with chicken).

Dredge the chicken pieces in the flour, then the egg wash, then the breadcrumbs. Set aside.

In a large skillet over medium heat, add the oil. When the oil is hot, add the chicken in 1 layer and cook until it is golden brown and crispy, about 4 minutes per side. Drain on paper and keep warm while you make the shrooms.

In another skillet over medium heat, add the butter. When it is melted, add mushrooms and season them with salt and pepper. Cook until they are browned, about 6 minutes. Add the garlic and cook for a couple mins.

Serve the Schnitzel with the shrooms poured over the top, or on the side. And gravy of course.

Everything looks good,love those plates of shrimp from the truck....I could eat that all day long.
Your low country boil looks great ,I love doing those for a crowd of friends.....seem to always be a crowd pleaser. Nice to see you in the St Paddy's spirit with the green Martinis. Very Happy Very Happy

JD.. Nice job on those chicken schnitzel's..

Next you want to try them in a sammich with some cheese and bacon..!! Best way to have a chicken club.

With all that great food you are going to be needing a bigger belt.. Wink Laughing

Thanks CB. Hope all is well up your way. One of the best parts about Hawaii was enjoying cigars on the balcony every morning and evening. Very nice indeed.

Your paella brings back memories of Mexico for me Dan!! Ate it EVERY day as one of my 5 or 8 meals a day at a all inclusive a few years back....had prawns the size of my fist on it Cool Cool I guess I know what I'm making for dinner tonight!! [ IF the foretasted snow holds off that is... Twisted Evil ]

Much more common than you would think! You can actually take a .22 rimfire and get a stock for it that does the same thing, giving you just as accurate of a rifle without the extended stock...its basically just the bolt located in the stock
