I have been working on the slaw recipe and I have made a few tweaks and some additions. I hope ya all like the new slaw.

Anything good is better with bacon..!!

SLAW:
1 cabbage, coarsely grated
1 lb. bacon thinly sliced
1 carrot, finely grated
1 sweet onion, minced
1 large Kosher pickle, minced or grated

DRESSING:
3 garlic clove pulverized with a tsp. salt
1 cups buttermilk
2 cup mayonnaise
1/4 cup kosher dill pickle juice
2 tbsp mustard
3 tbsp.lemon juice
2 tsp. salt
1 tsp. black pepper
1 tbsp. celery seed
1/4 cup sugar
Pinch cayenne pepper

1 - Saute bacon until crisp, drain on paper towel and allow to cool.
2 - Combine cabbage, carrot, onions, dill pickle and bacon in a large mixing bowl.
3 - Whisk together mayonnaise and buttermilk. Add remaining ingredients and whisk until uniform.
4 - Pour over cabbage mixture and incorporate.
For best results refrigerate over night to allow flavors to marry.

I am a coleslaw fan and my husband is not - I decided to try this recipe today - It is AWESOME. My quest for a great coleslaw has ended with this one AND my husband even liked it! YAY! Thanks for sharing!

Outstanding!!!!!!!! My wife made this yesterday to go along with the pull pork I smoked the the day before. Definately a keeper. Thanks for shareing this.

Think i'm gonna try your recipe...my second catering gig for only 25. They've asked for cole slaw, beans, potatoe salad, and pork sammies. Let me know if its changed!!! Reviews don't lie...

Roxy, I love your original coleslaw. I have gotten amazing reviews using your recipee with some tweaks.

One thing I think kicks it up a bit is fileting the pickles. I used kosher dill spears, and I cut out all the seeds. So you left with the real "meat" of the pickle. Doing it this way I have less pickle per spear so I can use upwards of 8 spears.

it depends on how much you are giving out per serving.. for a toping for a sammich you should get 30 or 40 portions easy, as a side dish maybe 15 to 20 servings.

When yo are making either of these slaws you say 1 cabbage, that could be from 1 lb to BIG!
What "weight cabbage" would be ideal for either of your recipes?

I use "medium" size cabbages.. Not real small ones and not huge ones if that helps ya any. Wink
