Festival and fairs

Hello everyone I'm new to the sight but not to BBQ. When I say BBQ I mean Low and Slow! I've been Smokin for about 10yrs. I have purchased a 500g reverse flow pit with rib box (entry level). I want to start going to fairs and carnivals in the New York Tri State area. Originally from Beaufort SC Southern Boy for life. I have taken all the necessary classes and obtain all Licensing. The dilemma I'm having is how to keep food warm during transport and keeping meat at correct tempature without drying the meat out will have smoker on sight with me. And if maybe some one could advise me on how I should price items. Also any ideas on what would sell good want to be different from other vendors.

I would imagine a cambro or the like is in your future for a warmer. I would take my questions to the catering or vending forum here on the site. Those members do it year round and will have the answers you need.
