Everyone in my house has been craving fish tacos for the past few days. I normally grill the fish for this meal, but Mother Nature has had a crazy sense of humor the last few days so I did them in my disco. Every once in a while you just need to feel your arteries clog up a little more Very Happy

Very simple fix. Used talapia for the fish and a simple but good box mix for the batter.

Weather was rain/ice/sleet/snow mix Shocked so I cooked in my garage. Sometimes you need to get rid of the welder and paint smells with some good old greasy food smells Laughing

Fish cooking nicely. As much as Ive cooked on my disco, I still have to have a trial first cook to make sure my heat is good. Even with a therm in the oil, you can still burn things fast in a disco.

Corn torts coming to life.

All's ready.

First one didnt even make it to the table. Plated with some thin sliced cabbage, pico and a squeeze of lime.

Second one made it to the table...thats where my beer was.

Fried or not, these things were great! Clean up was easy, just a few small pieces of fish left that Zoey the lab got and the disco is always simple to clean...dump the oil, wipe it out, put it in its place til the next time. I love my disco Very Happy

Thanks for looking.

CB, Thanks man! Never too cold to drag out the disco is it?

Mac, Thank You! I look forward to seeing your cooks on the disco for sure.

Kevin Thanks Bro. Love me some fish tacos.

Jarhead John Thanks my friend. I was picking the last few items up and putting them away and Zoey was chomping on the last few bites of fish and I opened the pantry door and there the jalapeno ranch was. It did get my best Homer Simpson "DOH" Rolling Eyes

Thanks George You need to get on that cook, they might not be so good for you in the disco, but man oh man are they good.
