I eat this dish every year when I go home to California and decided to give it a try on the Disc.
Started with three fresh Snappers

Seasoned them with salt and white pepper and stuffed them with finely julienned fresh ginger, scallions and a little garlic and also added some cilantro leaves.

These fish are typically steamed and then flashed fried for flavor and some crispiness.
I used a pizza grill as a steamer

I placed the pizza grill inside the Disc and added some hot water

Then added the fish

Covered and let them steam for about 12min

Then added some broccoli and pre-blanched carrots to steam for few min

I then heated some Peanut oil and added some fresh ginger and scallions to flavor the oil

And added the steamed fish

Made a mixture of soy sauce, honey, ginger, garlic, sesame oil, chili paste and dry sherry, heated it up and topped the fish to flavor it

Also topped the vegiies with the same mixture

And made sticky (sweet) rice to go with the meal

It was just like being in San Fran Bay area again Very Happy
Can’t wait for the next trip…

very tasty looking meal ya got there. I never thought of using the disk like that.
We also love the sweet rice, I soak it for a day and steam it like the Gal at the Thai restaurant showed me. It come out very sticky.

The Disco is very versatile Very Happy
I will be using this method soon to do Low Country Boil or Clam Bake Very Happy
