After seeing Mish's and Canadian Bacon's triumph doing this, I had to give it a go. I'll never use the crock pot again for this.

Started off with 4.6 LB pot roast


Had to get a cold beverage at the ready and something to watch



Rubbed down w/ a mix of Montreal and home rub



After sitting in the fridge over night, it was ready to go to work


Into the MES it goes at 210


All to do at this point is sit back and wait with a good cigar and nice scotch


After about 2 hours I hit my target temp of 155. Time to pull and add a few others to the party. Foiled it up and back in


After another 6 hours I pulled at 205. Got some great color on it


The wife wanted a simple plate. The veggies picked up some great smoke flavor from the roast, and the roast came out as well as I could have expected. With a side of homemade au jus the wife was all set. Mine was done up on a toasted roll. I inhaled that too quick to get a pic, but was also very good Very Happy

Looks like you had some great success with that beef.

I'd do a plate or two like your wife's.

Wow! Nice results using the MES30, it is motivating me in my «safety first» choice to buy that cooker.

Never ate pulled pork (not very popular in Quebec) but it looks gorgeous, I will surely try that in near future!
