Hi, it snowed about 9 inches last night,about 20 degrees out there, perfect day to cold smoke some eggs. I started a smoke tube of Alder pellets on fire, will let that burn for a few minutes, then close the lid and let it smoke. I put 3 dozon hard boiled peeled eggs,, 2 blocks of xtra sharp cheddar,, 1gallon of white vinegar,, in a shallow plastic pan out in the smoker at 10 this morning,the tube of pellets is just about done at 4.00pm. I will wrap the cheese air tight put in fridge for a couple of weeks, the eggs,, in a plastic bag for a couple of days, then they will get pickled in some of that smoked vinegar, with other stuff. betcha they'd go over really good at yer local beer joint Laughing
but prolly not so much at home later Very Happy

ya, the guys at work rave about them eggs, usin all vinegar, should be enough acid to keep them ok. Made honey chipotle, smoked pickled this time, go pretty good with a cold beer after work. Checked temps this evening 20.8 out side 38 inside smoker.COLD SMOKING.. Famous David
