So whats every one cooking up for Christmas dinner this year..? Are you getting to BBQ something or will it be an oven cooked meal.

I am going to my dear sisters place for Christmas this year and since I want to eat well I offered to bring the bird. I am going to debone the turkey, butterfly the breast out, layer on the dark meat and add some stuffing before rolling it up. The skin will go back on the outside as well. The bones, wings and drums will be smoked off as well to make some stock for gravy.

I am doing this at work cause I dont feel like making a mess at home and will be using a Cookshack to smoke the bird using some apple wood for smoke. The stuffing will be about 30% sausage with sauted onions and celery. Chopped pecans, dried cranberries along with fresh sage, rosemary and thyme and some bread to fill it out.

So here is hoping every one has a very merry Christmas with some good food, a few drinks if your inclined and your family decided to behave... Oh yeah, and Santa find your place.

Merry Christmas to you as well.

As tradition, we do ribs (2 spares, 2 baby backs) on Christmas eve and lasagna with hard boil eggs sliced in, for Christmas day.

everything will be done in the oven. It's supposed to be raining all day any way. We will have Ham, a corn casserole that we call corn crud (corn in a swiss cheese sauce topped with bread crumbs), scalloped potatoes and homemade honey dijon/chive bread. I am making a coconut cake for dessert.

Hmm. Not really sure yet.

I have turkey breast on the bone thawing.
But then my wife & I have talked about
scalloped potatoes a couple of times lately.
And now homemade lasagna sounds good too!

I have a 16lb turkey sitting in Smokin' Okie's holiday turkey brine that I'll cook on my off-set and take over to my mom's house for dinner tomorrow. Tuesday, we'll have dinner at my dad's house where he's smoking a ham.

I plan on putting on a few pounds in the next couple days Very Happy

I dont mess with the turkey for Christmas dinner,my mother still likes the turkey done the traditional way....her house...her oven and her cooking Laughing .......Merry Christmas everyone...be safe.

Doing a ham for the family. Also having tamales (pork, sweet, and cheese and peppers), side dishes, desserts and adult beverages. Definitely putting on some pounds the next couple days. Happy holidays to all the ringers and their families.

Debbie and I are smoking two Turkeys for our neighbor and a spiral cut Ham for us. We are keeping it pretty simple this year as the children are spread out with the rest of the relatives in their married lives. We will have mashed taters and gravy along with some smoked sweet taters.

I have NO idea what's for Xmas dinner Shocked . Going to my parents house and my mom told me to get there early so I can start cooking Laughing . I think she mentioned something about ham, turkey and 15 people Laughing Laughing .

Here are a couple pix of the Deli I work at just for Tony..Wink

The Cookshack. Aint much to look at but it gets the job done.



My co-worker Gill, getting his stuffing ready.



Just a wee cutting board. That sucker is solid and weighs a freakin ton.





A couple shots of the resto.





The board and Logo.



Turkey breast deboned, butterflied, dark meat add and stuffing in place.. Time to roll and tie it up.



Ready to go in the smoker for a couple hours. Apple wood is in order.



Done and ready for dinner. I also did up a pan of stuffing that I will cook off when the bird gets a reheat.
