Latest product to come out of my cold smoker - spicy smoked sweet gherkins. Drained from their sweet brine, cold smoked dry with hickory for 1 hour, then back into their sweet brine with red pepper flakes added. Not flaming hot but they do have a kick.

I'll give you another piece of advice: if you buy the ones sweetened with Splenda (Mount Olive makes them and Kroger has a store brand done that way), they actually have negative calories (meaning it takes more energy to burn them in your system than they have in them), making them a snack you can eat lots of when you're dieting. Same principle as celery, but actually tastes good! |
