Has anybody had problems with Fatties falling apart in the smoker.

nope not really...but if they do it just gives you a good excuse to eat the "fallen" pieces...

Sounds like you are using to lean of burger. Increase your fat content and it will stay together.

I have specialty hamburgers made for me at a meat market, 25% sausage, 75% beef, comes out great. If you want a lot of beef in your fattie, you might try about that blend. Awesome taste, at least in the burgers.

If your fatties are falling apart, you are probably forgetting to lick the paper! Laughing

Seriously though, I haven't had that problem before, but I've never tried making one with just hamburger. Meatloaf I have made with hamburger, but of course there is also egg and cracker in there to bind the universe together.
