A picture is worth a thousand words. Need I say more?
Cheese melts above 90 degrees F. If you don't believe me, see picture.
Do NOT try this in 100 degree F weather. If you don't believe me, see picture.
An old freezer with a new Amazin' Tube Smoker WILL get to over 125 degrees F. If you don't believe me, see picture.
Thermal mass does not make any difference when smoking cheese. If you don't believe me, see picture.
Troy doesn't know it, YET, but the shredded cheese that I gave him. Well, guess where that came from? If you don't know, see picture.
OK guys, I just started the cheese screw up thread.

I do not have pictures of my cheese stalactites and stalagmites from a time when I did something similar.

I don't have pictures of this past Saturday's fiasco, but it was very similar.
Things I learned....
An electric smoker set at 100 degrees WILL go beyond 100 degrees
Taking a phone call right after putting the cheese in the smoker and talking to your mom for an hour is NOT the way to pay attention to your smoker
and lastly, at least since cheese is mostly oil and fat, it cleans up pretty easily.... |

I only smoke cheese when temp is <50deg to avoid the possibility of curdtalites.
I have, however, forgotten to take plastic wrap off a rack of ribs when placing on smoker. Beers may have been involved. That was a mess. _________________ If at first you don't succeed...eat the failure, go to the butcher, and try again.

Dave, I can say that I have never smoked plastic wrap.
But I have left a few beers in the chamber and accused somebody of grabbing my beer. Foam coozies melt rather quickly. I too, think it was alcohol related.  _________________ Gunny 3073/4044/8411
