Gonna smoke some nice beef ribs for first time on Christmas. Any help would be great. my thoughts, simple seasoning- garlic, salt, pepper. Traeger at 250 degrees, hickory pellets. Wrap? Cook about 6 hours. What ya think.

Welcome aboard Rob.
Sounds like a good plan, but I think your timing is off.
I like to cook mine to a stage like a brisket.
Foil is a option, I don't use it.
Good luck and post pics, cause we love em.

6 hours is a long time for beef ribs, they dry out real easy, I'd check them in three. Foiling them, gives them that par-boiled or steamed taste. I let them cool some, then sauce them on the grill
