Tender quick not only has nitrate (unlike Cure#1), but also has added sugar & more salt. Follow the TQ guidelines for brining: To make a brine, dissolve 1 cup of Tender Quick in 4 cups of water. Place the meat or poultry in the brine and refrigerate it for 24 hours. I wouldn't add any additional salt.
