Well I finally got around to making my snack sticks. I followed Len Poli’s snack stick recipe minus the phosphates and sodium erythorbate. I used 4 pounds of venison and a pound of bacon. Mixed and stuffed into 19mm casings and stuck them in the fridge overnight and smoked the next day using my electric USD and A-maze-n-smoke generator with hickory dust. They turned out really well and are by far the best snack sticks I have ever made. I think next time I will double or triple the cayenne in the recipe. There’s absolutely no heat to them at all….

Looks good Mikey.
When you do your SS on that smoker, get 12" casings. Longer than that, you will be too close to the heat source.
