As a fairly new team ( 5 comps). Should one create there own rubs and Sauce with raw ingredients. Use commercial Rubs and BBQ Sauce's.
Or create there own rub by combing a couple of commercial rubs and BBQ Sauce. Thanks for any feedback!

If you have a flavor that works well in the first few competitions, then keep running with what works.

If you haven't made a splash with what you are using, try and get a taste of some of the meat that is doing well, you'll never duplicate what they are doing unless you use the same pit, meat, cook, techniques, but you may get closer to what teh judges want.

You'll find a dozen commercial rubs, sauces and rub and sauce combinations that work well or could work well, and three dozen people that will offer an opinion.

Good luck sorting through the information, to pick out some nugget that will work with your combination of pit, meat and technique.

I just had my first comp on Saturday 9/1/12 and I have to say I did very well.
Now .... I make my own rubs, seasoning mixes, bastes and sauces.
After the comp and every comp hereafter, I go over the number to see where I need to big chances or just wheek things a bit and see what happens at the next comp.
And it's like what Soezzy said, when you find something that is working and giving you consistantly high numbers that what you should stick with.
So this is how I'm going run my game and again I make my own STUFF!
