My recipe for sweet pickles is nearly identical, but calls for green Cayennes instead. Green are not hot at all, but have good flavor (I grow and pickle green ones - awesome stuff!). Although I don't care for sweet pickles, the people I give these to say they are really good.

Been pickling jalapenos & habaneros for too many years. Sterilize the jars in the dishwasher, and lids in boiling water. Slice peppers up, put a little pickling salt in the jar, pack with peppers and fill with boiling white vinegar, seal, cool, and put in the fridge. Definitely better then store bought.

One year early in my pickling days, we went to the beach with another family and all the kids (elementary school age). Wife got the pickled peppers to make nachos with. One night at the beach the kids made nachos, and soon after came out complaining the peppers were really hot. I checked the jar, and the wife had grabbed green habaneros thinking they were jalapenos. All was not lost though, one of the other family's kids ate them for a while.

Now I wait for them to ripen. Live and learn.

Not sure what sounds worse....slamming ones pickle in the door, or placing ones pickle in boiling vinegar.....what kind of books do we find these rules in?? Sick "academia" pervs nowadays!
