I'm catering a highschool reunion this weekend for 125 people. They want sliced brisket, beans, potato salad, bread, tea, and sauce. How many pounds of brisket do you think I should cook. Everyone there will be age 55 plus. I don't imagine them to be heavy eaters. Thanks!!

5-6 ounces cooked meat per person would work....might bounce that up to 7 ounce average for the heavier eaters.

I would start with about 125 lbs raw brisket, Should give you plenty.

maybe im having a brain fart, but even
with a 50% weight loss, how do you get to 125 lbs?

125 lbs of raw brisket expecting 50% loss after cooking would leave him with 62.50 lbs cooked brisket.

62.50 lbs cooked brisket would give him 1,000 ounces

1,000 ounces divided by 125 (guest count) would give each guest 8 ounces of cooked brisket.

Knowing not everyone will take 8 ounces but maybe 50% of them would, this would give him the extra meat needed to feed the "hungrier" guests....without running out and without having a bunch of meat left over...hopefully. Wink
