I got a great deal on a slab of strip(2.99lb) and was wondering if any one has tried to smoke and slice a slab of strip steak like ya would a brisket. At the price i paid i'm sure its not prime cut but does have nice marbling and fat cap. Going to cut this one up into steaks but i can get more.
Ever tried to smoke one??? |

If you do smoke it, treat it like a prime rib instead of a brisket. Smoke it to about 120 internal, and then finish over a hot grill for a couple minutes. Let it rest for about 30 mins. under a foil tent before you slice. The ends will be med. to med. well, and the inner slices will be med. rare. _________________ Mike
