Here are some final pics, sorry for the late update









The Hint of Houston rub is a winner, first time my wife didn't say a little salty. It formed a really good bark and didn't overpower the meat. Thanks Big Ron if you read this.

The brisket was tender but a on the dryer side. I assume my cooking method is the cause of this, no therms on the pit and no meat therms. I think the pit ran really hot for the most part. I wanted to see if I could do this by sight and feel. I have a long ways to go lol. I really need to invest in a good slicer.
