Started a new topic so I would get the correct response. Okay, so I have obviously used chaffing dishes before but I could use some advice from you Caldera Three Bay Caterer owners. Please pardon my ignorance but do you use a water pan with it? If so, how deep? Also, do you use it as is or add a lid? finally, when using as a wash station to satisfy the HD what depth of water pan do you use?

You will need a water pan to hold food, otherwise you will have hot spots wherever the heat source is located.
You will need a water pan, food (hotel) pans and a cover for each bay. If you have chafers already, you should have this.
I bought 4 of these for my trailer build for use as a 3 bay sink and handwash station.

Yes, it's the same set up as a regular chafer, barring the option to use sterno or charcoal. I use the canned heat, never tried the charcoal.
As for warewashing, your local regs would dictate that, deep enough to cover your wares with water for sanitizing I would assume, never used it as a 3 bay sink.

I have used it twice now and this thing is awesome! I have only used charcoal and my challenge is figuring out how much to use initially. It can get extremely hot if using too much to start. Now I need to find some kind of plastic container big enough to transport it around in so as to not damage it. _________________ Steve Whiting
