Canada Day would not be the same without firing up the smoker at my place. I sent out all the invites on time but no one showed up which aint too bad, there is more food for me.. Razz

After a run into town for some beers and some groceries I found myself firing up the smoker at 2:30 so I decided to try "hot and fast" to see how they turned out at 350ish.

I have not done dry ribs in a while so I made up a rub that was not too hot so I could use it for sprinkling the finished ribs.

Rub

3 tbsp smoked paprika
1 tbsp smoked salt
1.5 tbsp black pepper
1 tbsp garlic powder
1 tbsp cajan rub
1/2 tbsp chipotle powder
1 tsp cayenne pepper



Nice and meaty. 6.35 lbs for 2 racks..



After about an hour and a half and looking good.

I intended to make some smoked tater salad but had a change of direction mid way and went with a twice baked smashed tater casserole with red skin potatoes, carmelized spanish onion, bacon, mozzarella and cheddar. Glad I did.



Going on.



Getting happy.



The ribs are done and now its time to let them rest a bit before dinner. I am not sure if I am a fan of hot and fast for ribs as it seemed to dry out the meat, they were not as juicy as I am used to when cooking at 225 - 250 range. They were done in just 3.5 hours.



Taters ready for the plate.



Dinner as I knew it last night.. Taters topped with sour cream and chopped green onion and cole slaw on the side.

My darlin wife intended to make a Swedish summer cake but for some reason it did not turn out as she planned.. So when your handed lemons, make lemonade.. Dont know what you would call this but it sure was delicious. She took the almond meringue from the cake and plated it up with fresh strawberries, vanilla ice cream and JD whip cream.

Nice ribs & the plate up is extra good !!!

I like the crispy of dry done ribs, so I'll do them more often than sauced / glazed.....

Tell the Mrs. that dessert is off the hook !!!

Thanks for the kind word guys.. It was a good day of BBQ.

Today, the wife and I took the second rack and the left overs up to my dear old Ma's place for our dinner. It was nice to share some BBQ with Ma. She ate 3 ribs and saved one for tomorrows lunch.

My wife took a muligan and this time her cake turned out..!! Very Happy

All of it looks delicious ,Roxy. I am really diggin the potatos and especially the dessert. Not that the ribs don't look good, because they do, but I am a sweets first type of guy.

Looks fantastic Roxy - hope you survived the storms last night!! Saw some doozies crossing Canada early this morning!!! Lord knows we need the rain in these parts, assuming the same for ya'll, but those storms looked wicked!

Real easy.. I smoked off the red skin taters till they squished when I squeezed em. Cut them into big bit sized pieces, placed in that big ole pie plate and then kinda flattened them with a fork. Seasoned with your favorite rub. Topped with the carmelized onions, bacon and the cheeses and into the smoker till the cheese was melted and just starting to brown.. Dont ask for times as I dont know.. its done when its done.

My darlin wife is a very good cook in her own right with desserts her specialty, but I have spoiled her so that it is rare that she gets motivated in the kitchen..

She came up with a dessert recipe all on her own that I used and took 2nd place in the Canadian Open BBQ Championships a couple years back.


White belgium chocolate cheesecake with a short bread crust, a raspberry compote and toasted shaved almonds.

She is a keeper..!!
