Sorry no pics for this one had some technical difficulties , as in , my PC at home bit the dust along with my modem Sad and I can't do the pics here at work....

Well I cooked a PB ,Ribs , Moink Balls and a variation on ABT's...

My overall impression of the WSM is I LIKE IT... I could control the temp much better than on my offset....

I did my first bone in PB , it was good , but , I think I will go back to getting my PB's from GFS as this one from the butcher was 8.5 lbs and cost $23 , at GFS I get 2 8lb PB for ~$26... I was surprised it only took less than 8 hours at ~250 and the internal temp was at 216 Shocked Shocked , I took my eye off the thermometer at the stall , came back and it was 216....

While the PB was cooking I made Moink balls out of ground brisket , these were really good , but , I did cook them a little too long and they were a bit dry , but , a splash of Big Rons sauce and all was well...

Along with the Moink's I made a variation of the ABT's , a few weeks ago we made ABT's with Jalapeno's , good god they were HOT , I had to give them to a friend , we made about 20 of them and could only eat 4. Then the next day I found mini - bell peppers , I tried using them , well just not any spice to them , so , ,last weekend I took the mini-bell peppers stuffed them with the cream cheese mixture but added ground up hot sausage to them , now these were REALLY good !!! I also didn't cut them in half I just cut the end off , cored them and put the cream cheese/hot sausage mixture in a bag and piped them full of the mixture then wrapped them in the bacon , MUCH easier....

unfortunately on Sunday there were way too many thunderstorms in the area so I had to do the ribs in the oven , I put one rack in the freezer and cooked the other , hopefully this coming Sunday I will have time to do the other rack on the WSM....

sorry no pics , the Moink and ABT's came out fantastic looking , I will have pics of those for sure the next time I make them... maybe Sunday...

Which size WSM did you get? I'm sold on the WSM but i'm unsure what size i want. Only issue is i have about $80 in gift cards to bass pro but they only carry the 18.5.

I went with the smaller one .... check out this thread I started before I bought one , I was asking which size to get , got lots of answers , I think the general consensus was the smaller one , but , it also depends on what you want to do with it ...

Yeah I expected some grief from this thread , I actually thought about moving the WSM into the garage , but , at this time that isn't an option either , too much crap in there... I have also been looking at a way to basically put an awning on the front of the garage so I can cook in the storms , especially since the garage faces East...

I also tried another round of ABT's with Jalapeno's , but , this time I soaked half of them in milk , it does tone them down a bit , but , the way I made them using the mini-bell peppers is easier and were fantastic...

N8, When you use the japs are you cleaning out the seeds and pulp? When I do that they are normally not hot at all. In fact, I have been leaving most of the pulp in for MORE heat. Not just for me but others as well.
I think I will try your mini bell recipe, they sound delicious!

I always buy my butts from a wholesale store, same with my brisket. Same meat, sometimes better, at a 40% discount. I have to give you an F- on the ribs in the oven. You don't have to cook in the storm....the WSM does and it will do just fine. You just need a vent cap for your top vent. I've seen various things from large elbows to jerry rigged cans, used to divert the rain. Sometimes when you've done something so heinous (ribs in the oven) it is best to protect your friends and loved ones and not burden them with the guilt you are feeling. Just try to compatmetalize it and live with it quietly Razz

Yeah took everything out of them , I don't usually eat that much hot stuff so I am not used to it. To give you an idea of how wimpy I am when it comes to hot stuff compared to all you guys , Franks Red Hot is about as hot as I can comfortably go...

regarding the mini-bell's all I did was use the same cream cheese mixture from the ABT's and added probably a 1/2 pound of the hot sausage (slightly browned) , then piped that in the peppers and wrapped the bacon around them , we wrapped the bacon over then end to seal in the cheese mixture , works great...

I am sure you will like them , plus , for me it was easier to assemble than a standard ABT...

Well the story gets worse Embarassed

due to my girlfriend having to go back to work (she manages a small restaurant) I had to pull the PB off the WSM and put it in the oven too on Saturday , we were supposed to be gone longer than the WSM would hold temp....

I know what you are thinking "oh the humanity" not the Hindenburg version , but the " as god as my witness I thought turkeys could fly" version from WKRP , if you haven't seen it , search for it in YouTube....

I will try not to do such heinous (i don't think i have ever spelled that word before) acts again in the future...

I may very well get beat severely about the head & shoulders for this one, BUT,

If they're still too hot, but you like jalepeno flavor, you can soak them in Sprite ( yeah, the soda pop)
for a few hours to overnite & it will take a lot of the heat out & leave the good flavor....

I made some others that I soaked in milk for awhile , it toned them down a little , I will try the sprite thing too , I like the taste of them , I also really liked the other version we did , I am still experimenting so I am sure I will try the jalapenos again , besides I planted several jalapeno plants so i will have to do something with them.

N8DCJ if you ever encounter another rain and you are in a pinch try this. Open your top vent on your WSM. Set a charcoal chimney on top of your wsm, take a weber kettle lid or similar with the top vent closed and set on top of the chimney. With your breathning holes for your chimney closest to your WSM lid it should allow plenty of air flow. Adjust all vents as necessary to maintain temp.

actually the rain doesn't bother me much , I spent 12 years of weekends on lake Erie and being wet was just the norm...

Its that 100 Million Volt 30,000 Degree bright flash from the sky that I try to stay away from. my smokers are all under tree's and my 75 foot ham radio tower (that's were the N8DCJ comes from ) is about 80 feet away. I do not know why but where we live has lots of close lighting strikes , it probably has to do with the terrain , on the other side of town I never had these strikes this close so consistently.

I used to love that show , but, it is no longer on any of the 3 bazzilion cable channels i get , or should i say 23 channels and 3 bazzilion infomercial channels.

hmmm , I might have to see if it available on DVD...

I always have one of my "friends" stand about 50 feet away and hold a golf club skyward while I tend the smoker Shocked My brother in law in Hot Springs Arkansas has been a ham operator for 40 plus years. He used to erect ham radio towers in his younger years. He is Phil @ WA5VRQ.

Yeah I used to do that stuff 20-30 years ago , when i was about 20 I swear I spent every weekend on top of towers , I was the youngest member of the one club and always was "volunteered". We use dto put up some pretty big stuff back then .... but , I am done with that now , I have to have someone else do the climbing for me...

Maybe I should carry a one iron around , I think the saying is that not even god can hit a one iron Very Happy Very Happy
