Just curious as to what you all are using as far as heat wells and such for hot holding.

I use a Humidified holding cabinet at 150 degrees for PP and sides then transfer into Nemco countertop warmers as needed for service. Works pretty well for me in my trailer.

I use Roasters for now.... turn em down on low 150-200.

the warming box on my Lang, even use my small flat top with a chaffing pan on it, using 1/4 pans etc when needed.

Say there Mr T........
Any problems with those warmers yet? Does they take much juice(power) on low. Just curious?

No problems at all - 3 will run on low on a 20 amp circuit - I usually run 2 per circuit and crank them up on high for the first 20 min or so - though I could just fill with hot water to begin with Embarassed But I have the amps and plugs available most days, so I let em rip!

$ 79.99 is a bit of a sale price, usually 86 bucks so i pulled the trigger & ordered two of them this afternoon. Thanks for the info.

I was just thinking the same thing. We are vending for a benefit at the end of the month and are getting equipment together. Looks like another purchase for us.

Received my warmers today (Wednesday). Ordered them on sunday, no damage, well packed clean & purdy units.
Only negative thing i can see is the temp. dial is just numbered 1-6 & not in degrees.
Other than that i cant wait to try them. No more roasters!

I have found running them around 3 - 3 1/4 will hold warm without over cooking!

we use 2 of those avantcos, they work great for us.

crank em up to 6 when you fill em with water, then dial down to 3 or 3 1/2 after they get hot

easy to clean, fit all pan sizes, very convenient

also, if you got something like mac & cheese or baked beans, it's gonna get your pans pretty crusty by the end of the day. we started using these high-temp pan liners (basically just a special plastic bag). they hold up to the heat, don't add any weird taste, and make dish duty WAY easier at closing time.
