I highly recommend 40% [ or more] down - once you start telling people that date is full, you MUST get that income - one of my friendly competitors doesnt - recently tossed out a hundred pounds of fish, he had paid for rented deep fryers etc - no down payment, showed up - gig was cancelled, nobody bothered to tell caterer he took the loss, I know I aint got that kind of cash looking to be tossed out the window!!
