We just finished our first catering job tonight. We were asked by a friend to cater their wedding with a guest list of 156.
We were asked to cook pork butt and chicken thighs as a meat choice and baked beans and potato salad for sides.
I am completely shocked at how well/uneventful it went. No major problems, just minor errors in forgetting items and having to run back for them. Everyone had great things to say about the food, including one guest that said he has eaten NC BBQ most of his life and thought ours was far better than anything he had ever eaten.
Several business cards were handed out and lots of potential inquiries into using us for future events.
I think we have definitely raised the bar for the other area BBQ caterers.

Thanks 1buckie, it wouldn't have happened that way if I didn't have all of you guys posting about pitfalls. I don't know how many times that I went over every detail/issue in my head, then run to go get some more supplies. If didn't read everyone's suggestions about food amounts I would have had big issues. The porkbutt portions got covered with only about 5 sandwiches leftover. The leftovers that we did have (4) meat/cheese trays that were asked for specifically along with some of the sides and chicken got donated to the local homeless shelter. So nothing really got wasted.

Congrats!!! I catered for 15 years and learned to make a "list" of things NOT to forget. Then checked them off the day of each event.

Yes it is a very good feeling. We have been getting some feedback from the bride, today, that we were a hit and that her family is wanting to use us for future events. I know talk isn't a deposit, but it sure does feel encouraging. We had one guest tell us that he has ate NC BBQ all his life and this was by far the best that he has ever had Very Happy Very Happy Very Happy . Then to add to my weekend of happiness, one of the grocery stores in town moved our sauce up to an eye-level shelf Shocked Very Happy.

Thanks Geronimo, I thought the list in my head was good enough, Rolling Eyes Wink. I'm glad the reception was only a few blocks away from us. We use a list for competitions, I guess I should adapt it to catering also.

Congrats! I have my first on site gig with 100 to serve at the end of the month. Its a retirement party. I hope to have the success you acheived! The help, tips and pointers from experienced business here in this forum is very valuable and appreciated.
