i have cooked a few tri tips, but just for the family so i haven't paid attention to the shrinkage.
anyone know about what % yield you get from a smoked tri tip
i am trying to feed 20 people tri tip slices and am wondering how much to buy
i was thinking 12-15, lbs does that sound about right if i am doing 1 meat? _________________ The Sultan of Smoke!

I'd guesstimate 85% yield.
So 15 - 20 would be plenty... 15lbs will give 10.2 Oz / person and 20 lbs will give 13.7 Oz. _________________ Here's a change Robert.

Depends on if you are going to slice as steaks or thinly slice (as I have always served).
My experience saw about 10 servings out of one 2-1/2-3 lb tri tip...thinly sliced.
Given that it is the only meat, I would prepare 4 tri tips...tri tip is too expensive to have too much left over.  _________________ Where rumors end and legend lives forever... |

for cost estimating purposes, I would consider a 70%-80% yield, if you come out better than that, consider it a bonus for the bottom line. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

I have cook hundreds (if not thousands) of pounds and have not seen hardly any shrinkage after cooking.
That being said, I start with quality (choice) peeled tri tips from costco that are already VERY closely trimmed (peeled) so I rarely had to do any more trimming before cooking. _________________ Where rumors end and legend lives forever... |

| For tri-tips I plan on 7 servings per tri-tip. I slice at a carving station to order which works if you have about 100 guests, over that you just can't carve to order so you have to slice and chafer the tri-tip with au jus. If slicing with a Hobart slicer you can get thinner slices and the tri-tip will yield 8-10 servings. I always have small bolio rolls from Sam's Club available for those who want a sandwich. Usually the big eaters have a sandwich and that fills them up with bread so they don't hover around the tri-tip eating more meat which throws off my portion count. |

Good move, those little diamond shaped rolls are a great deal, what 2 doz. for $3.96
Almost hard to believe....
They work great for Tipwiches or pulled pork...

Might be a little late on this, but like others, I cook a ton of tri-tip too.
I only cook peeled tri-tips from Sams or Costco, and figure a 87%-90% yield on those. If they are un-peeled, I would figure 75%. _________________ -Pete
