What do ya'll charge for labor: cook and helpers. Trying to come up with a better pricing system.

I get about 10 for some, but most alot less. I do it mostly for fun ,because I like to cook, but getting tired of breaking even. Got asked to come to Kansas City next april so we've got to have our s**t together.

Directly from my website:
Minimum event price is $425.00 this includes the Lang deluxe smoker grill to your site within 20 mile radius of Fredonia Wi, this is for a lunch or dinner, but does not include a long, full day of smoking, $675 minimum for an all day event [ mileage fee will apply for long haul ] charcoal and hardwood fuels, basic seasonings and "pit" operator - actual food costs not included in this price.

Discounts available to some organizations and all Military related gatherings.

Every job is different...I am assuming you are insured etc, if no - do so - its cheap compared to lawsuit etc....
Servers are usually $100 each.
I still sometimes use the charts SoEzzy supplied http://www.thesmokering.com/forum/viewtopic.php?t=6531 to double check - be sure to adjust meat costs etc for your area, what you actually pay at market, wholesaler etc...
A great rule of thumb is actual cost of everything for cook plus 350% - you wont get rich quick, but wont go broke either - gratuity is another ball game - automatically add in or simply mention to customer??! I USUALLY say I didnt add one in as I hand them the bill as I prefer customer decide if we deserve one or not, which USUALLY ends up getting us a tip bigger than 15%!!! Some will say they paid enough for the meal.....I roll with that too Sad Very Happy I have had customers hand $100.00 bills to each of my assistants, and a couple to me....nice little pick me up after a long day smokin!!

Labor for cooking & serving an event, or extracurricular duties such as clearing tables and such?

Most CPA's prefer your combined food & labor costs to be below 55%
I try to shoot for a 25% cost ratio for both food and labor, and set my prices accordingly so it is presented to the client as an all inclusive price for the event, then I divide total cost by the number of guests to show them their per-guest costs so it is easier for them to understand.

I do not care for itemized quotes, because many people will try to haggle over a few things to lower their costs, and we just don't play that game because we are not in the used car business.

I have a min. guest count of 50 and a min. p/p price of $14.95 plus tax for chix and another meat plus two sides. Apps, drinks, extra sides and, travel out of the area increase the price.
