Posted: May 07 2012 Post subject: Smoked Turkey Legs with Big Ron's HOH |

I picked up a case of turkey legs last Friday. I planned on 25 to 30 per case. Ended up with 41.
I had really planned on pizza today for the throwdown, but I don't do rain, thunder or lightning outside while under a TS Warning.
I peeled the skin back and rubbed the meat with Big Ron's Hint of Houston. Pulled the skin back up, put some EVOO on it and more HOH.
These were cooked on the FEC-100 (inside) at 326 F for an hour and a half. IT was 175. Foiled and rested 30 minutes.
I've deep fried but never smoked em before. You talk about good.
All rubbed up and in the smoker.
Finished. Chow time.

Legs look great buddy. You're right. We really don't eat as much turkey as we should. So you were thinking 30 per case and ended up with 41. Don't you just hate when that happens? _________________ WSM 18.5"

Them legs look damn tasty Jarhead. How'd the skin turn out.

Thanks IS. It was a welcome surprise. Troy (TrailerBuilder) inherited 8 of them last night at the Cinco de Mayo party.
Thanks Sparks. The skin was bite through. I wish my yardbird would turn out like that.
I cooked at 325 F.
If I wanted crispy skin, I would stick them over direct coals for a few seconds while turning.
I wanted these for pulling. They are going to make some chef's salads and maybe a sammie this week. _________________ Gunny 3073/4044/8411

I've done them foil-baked (braized,in sauce) & then taken out & smoked....
But they never turned out looking that good !!
They look to be way better than the open pit ones we had at the State Fair last year too.......
I just gotta change my ways....

Thanks Ken, I am just experimenting for future vending, when I get my trailer done.
Now, I gotta figure the hold times on them. That's when I will probably have to use a grill to crisp up the skin before serving.
I don't want to deep fry them. Too big of a PITA to get the oil cooled down. _________________ Gunny 3073/4044/8411

Jarhead, good looking turkey legs.
Stop giving me ideas what to cook next, I've been trying to clean out frozen leftovers for two weeks.
I guess cooking for just me, I shouldn't get family packs and 9 lb. shoulders.  |
