I finally got around to making some snack sticks.

I had a kit that I ordered from Eldon's. It said it makes 10 pounds, so I used a 50/50 mix of pork butt & lean beef.

I stuffed them Friday evening & smoked them all day Saturday. Put them in at 7am & took them out around 4pm.

They firmed up nicely & have a good snap to them. Smile

DAYUM, those look awesomly awesome Laughing Laughing . FINE job, sir! I've seen some other posts about making these and yours ranks right up there at the top.

You say you got a kit from 'Eldon's', do you have a link you're willing to share? I've been wanting to try making some cured and/or smoked sausage (I make fresh sausage a couple of times a year) for a while, and this looks like a good way to start.

I got the kit from Eldon's Jerky and Sausage Supply.

This is the one I used.

It comes with everything you need except the meat.

The instructions called for 9lbs venison & 1lb fat. I used 5lbs pork butt & 5lbs lean beef.

Nice work, BT!

Those look outstanding! Good color, nice texture in the slice, and pleasantly 'wrinkled' Very Happy —all the things that make sticks appealing to the eyes! The fact they're also quite taste = homerun!

NEXT: Now that you've got a handle on the sticks process, the next step is to modify the stick mix to your own personal tastes & style. It could be you like 'em just AS IS—which is cool—but part of the fun and challenge is trying variations that appeal to both you and your 'eating' audience. Great learning experience too as you find out what works and what is NOT so successful.

They look great...

Hell yeah! I love tweaking recipes.

I have already been wanting to do some variations. My wife & son both loved this batch. Smile
