Need some help! I am going to be cooking for a tailgate party in a few months, and have been asked to provide a veal offering in addition to the pork, brisket, etc. I was thinking of smoking some veal shoulder roasts, and then slicing them down for sandwiches, but have never done so. Correct me if i am wrong as its been years since i have had veal.
Veal has much lower fat than a mature cow is so when you cook it low and slow it would probably be very chewy and dry. If you got whatever you were serving cut ahead of time i would try using a small amount of EVOO, Rosemary & Garlic as a rub and place it on a 275* smoker with something light as a wood for 25minutes then grill the cut till its ready. |
