I have never vended burgers and brats before, I have a last min gig this weekend filling in at an auction where the scheduled vender went belly up [?] over the winter - I am doing 1/4 pound burgers, 1/4pound brats, 1/4 pound all beef dogs and kiddie dogs....figured $1.75 for the cheapie dogs, $3 for the good one - same $3.oo for burger / brat falls into 3.5 markup, but wondered what ya'll get!?! $1.50 for tater salad or broccoli salad or beans....Gonna charge $.50 for an 8 oz cup of bad coffee, $1.00 for soda or water - unless ya'll suggest otherwise!

I don't know about your location, but the 'poor farmers' here are doing well and had no problem last fall, paying $4 for burgers, $3 for hot dogs, $4 for smoked brats, $4 for PP, $5 for brisket, and a buck for coffee, ice tea, canned soda and bottled water.
All sammies are 4 oz. of meat which works for me, but I'm going to raise my prices if meat doesn't start to come down.
Standing around at auctions, farmers seem to drink a lot of coffee, if it's decent , and the ROI on coffee is pretty good.
For vending these farm auctions, I'm a one man show, so I serve small bags of chips for a buck, instead of doing sides.
I buy big bags of potato chips and cheese puffs by the case, direct from the truck and re-package them in fold lock sandwich bags ahead of time. The cost ratio is lower than buying the small pre-packaged bags and for me, it's well worth the time and effort.

For me... i can get $5.00 for a pulled pork sandwich.
My main deal is i`m usually the only BBQ guy. The others sell burgers and dogs off gas grills. IF i grill burgers & dogs its on a open top charcoal grill adding a chunk or three of smoke wood for the aroma. An open top grill add`s the "look see factor".
People eat with there eyes and noses... if you know what i mean. Park that grill in plain site also, you`ll sell more than the others.
This was taken a few years ago at an Arts festival. I was grilling chicken legs and as you can see behind the smoker where the grill is, people would stop and watch me grill. The grill was hot the legs was sizzling and i made money.
The "look see Factor" That was a fun day. |

| I like to stay on the even dollar and change portion size to compensate. ie no .50 coffee. Have been selling a load of the 8 to a pound pork/chicken/beef hotdog for 2 bucks. I think they take smoke and taste better than all beef dogs. |

MRH, I was also surprised how good the old stand by "mechanically separated chicken" and other filler tube steak tastes once smoked!! Smoke does do wonders with that pink goo....
BUTT, the high quality 1/4 pound all beef wrapped in bacon goes for $5.00 at my normal spot on a hogie bun, with basic sides - $7.00 loaded with PP, beans and slaw, weighing in at 1 1/3 pound!! ..they cost me the same as a good brat, so the profit margin is GOOD! _________________ Money Maker
