Cooking for 500 people at a church event so we will be feeding families with children. How many #'s of beef and chicken and what ratio of beef vs. chicken? 50-50?
We will be serving the food so no one will be getting more than their share.

Normally, considering the tortilla and add-on we figure around 4 oz per serving, two per person, so 8 oz. But to be safe we always ask if they would like to have some to take home, which we use as a cushion.
Beef fajitas, for us, shrink 20% and needs to be factored.
As to the ratio of beef/chicken - we always ask what they would prefer. |

I guess I need to rephrase the question. At this type of event serving families, what generally will be the ratio of beef vs. chicken fajitas people will want? Do I buy the same amount of beef and chicken? With families, I'm thinking more chicken will be served but I'm just guessing. Any advice? _________________ RJV57Chevy says "smokem"

No one but your guests can really tell you what they want.
If you are a member of the church and can get feedback, go and ask them, sample 50 or 100 people and scale it up, then cross your fingers and hope you picked the average sample set. Or that they don't change their minds when they smell the meal.
You could easily ask only people that would take one or the other meat, and find all other people want the other meat. _________________ Here's a change Robert.
