Man that fatty looks good. That thing is gonna taste even better the next day. _________________ WSM 18.5"

Thanks everyone for looking, and thank you for the accolades.

Ummm ..... it tasted like ...... ummmm ..... well.... it tasted like cooked prosciutto.
Seriously, dude, it had a nice smokey flavour, and a little crispiness to it too.
Every bitefull had a mixture of everything in it,
so the prosciutto did not really stand out too much,
but was a great compliment to the whole thing.
Try to find thicker sliced stuff. Hope that helps.
And yes, it tastes great even sliced cold! _________________ "If the women don't find you handsome, they should at least find you handy."

| That looks ridiculous! Everything held together perfectly. You got me thinking of other ideas that are possible. |

Thanks Curtis! My limited experience so far with fatties is:
Let them rest overnight/24 hours in the fridge to allow them to set up.
IMO, it holds together better. Let your imagination run wild with a fatty - I do! _________________ "If the women don't find you handsome, they should at least find you handy."
