Cooking for my son's soccer team in a tournament. Free gig. Have some questions...
1) I'm planning on smoking at about 250 degrees, and putting in a large cooler to hold. How long will they stay hot in there?
2) Families are bringing sides. I'm cooking for 20 teenage boys and families. Anything left I'm giving to charity. How many thigh/leg quarters should I do? I know that's a bad question, but I gotta ask.
3) at 250 degrees, how long to cook? Your opinion.

Figure at least 1 piece for person if this is the only meat.
As for holding; per typical law, you have 4 hours at an uncontrolled temp, at that 4-hour point it should be either consumed, or disposed of. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

If you put them in disposable pans, and then foil over the top of each pan, this will hellp keep things hot too.

1 chicken leg quarter per person, if you are buying in bulk, I think they come 40 to the case, if you are buying from WalMart, they are often 9 or 10 to the 10lb bag, 20 kids and family's, you have a better idea about the numbers that may turn up than us.

You may need up to 2:15 - 2:45 hours, I'd start checking at about 2:10 - 2:15 those nearest the heat may need rotating away a little earlier, and some of the colder ones rotating into the hot spot. _________________ Here's a change Robert.
