I have been approved for my first big gig. It will be a 4 day music festival. Last years attendance was about 16,000. Although I will not be the only food vendor, I will be the only BBQ vendor. Approximately 20 food vendors will be there. I am keeping the menu simple. PP & Brisket sandwiches and possibly brats, along with baked beans and slaw for sides. Based on surveys and research I believe the PP will be the best seller. I would appreciate any input as to how much meat I will need. There has never been a BBQ vendor at this festival. Two years ago I did a season of just music fest.They can be good but the people are there to listen to music and drink.most of your sale will be before each show and the after all the music is done for the day.PP,ribs,chicken where my best sellers in that order.I didn't have beef but then wasn't asked much for it.(mileage may vary)But DO have ribs on your menu.have plenty of your best sellers for the after the shows,that's your busy time. Make sure you have your smoker running all the time!even if it's empty,It makes people hungry.I have been told many times as there at the window,I have been smelling your BBQ all day and had to get some.If your running your smoker empty just keep a couple pieces burning, you don't have to be at temp.Also if there is camping and motorhomes food sales are lower.they cook at camp and save the money for beer,till late nite munchies.
