I have a customer looking for me to just cater ribs for about 50 people. What would be a good price, and should I charge per person? I will be serving spares. My price per # is $1.85.

If its ribs only and you are delivering to them - charge per rack. 4 ribs each - 12 ribs per rack, if they are not heavy eaters then a total of 17 racks. If you are serving you might want to charge per head.

20-22.00 per rack is what I vend for.2-3 people per rack

You first need to determine how much you need, and that has already been answered for you, then you need to figure how much this product will cost you, then when that is decided, customer prices can be figured off of your actual cost.

If you go back and do a search, there are some great threads in this forum on how to figure your pricing by using mathematics (food-cost ratio) to figure this out correctly as opposed to pulling a number out of an orifice, or mirroring someone else's prices when their costs may be dramatically different than your own.
